Just Like Grandma Beers Would Make!
I was pretty young when my grandma Beers, (my momma’s mom) passed away, but I still remember so much about her! Mostly because my two sisters and I spent so much time with her. She was the best grandma! One of the things she was really good at was cooking! She always cooked for an army, and there was always a desert or bowl of fruit with every meal!
She made everything from scratch and from canned vegetables from her garden. I don’t ever remember her following a recipe, she always just knew what to put in and how much. I would always ask her how much to put in and she would tell me, “I don’t know so you will just have to watch and pay close attention”!
I Watched and Learned!
So I always did and intently! I have her ability to do the same when cooking, or baking… I guess watching her paid off! I even learned how to make and can grandmas grape jelly. My aunt gave me the recipe and directions over the phone, I guess that’s the Beers side in me, because they’re all wonderful cooks!
Grandma always allowed me to pull up a chair next to her and watch, and even help! I loved kneading the dough when she made her homemade biscuits and gravy, one of my all time favorite breakfast foods! No one makes biscuits and gravy like she did! YUM!! My next favorite meal is fried chicken, and oh boy was hers the best, always fried in lard!
Grandma also fried many things, and I mean many in bacon grease that was left over, like eggs. I remember spending the night at her house and being woke up at 5am… with her asking me how I wanted my eggs, at that time I only wanted sleep, but she would have been right back in there telling me to get up because the “days a wasting”! I always wanted the eggs the same, the yolk runny, but she still would ask me every time lol.
Fried Potatoes and Cabbage with Sausage.
One thing my grandma would make with bacon grease, was fried potatoes and cabbage with sausage. For Sunday lunch today that’s what I decided to make. I just didn’t use the bacon grease, it all turned out good and tasted great, but, y’all bacon grease, my grandmas way….it’s the only way!!!
So I thought I would share my recipe with you, and yes some of it is season to your own taste. Also use bacon grease, or use what I did which was olive oil. My batch is like my grandmas, double and enough for my large family.
Ingredients:
- 6-7 medium size red potatoes, peeled and diced.
- 2-heads green cabbage, diced up
- smoked rope sausage (I prefer Hillshire Farm or Eckrich) cut into slices.
- 1-2 tbsp House seasoning
- 1-2 tbsp onion powder ( use real onion if you like them, I hate onions)
- Salt/pepper to taste
House Seasoning Recipe
Ingredients:
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- I use an air tight sealed jar to mix the house seasoning (* Pictured below) I also pour some in a shaker for the table. This seasoning can be used for just about anything you want, i.e.; steaks, chicken, potatoes, eggs.
Directions
Heat oil or bacon grease in a large skillet, add potatoes and seasonings, fry until al dente. Next add the cabbage cook until the cabbage wilts down, stirring occasionally. Then add the sausage and turn temperature down to low and let simmer for 30 minutes until the cabbage and potatoes are tender. Hint, the longer it’s allowed to cook on low the more the flavors marinade. Then its ready to eat as a meal in its self or as a side dish, it’s a good compliment to pork chops.
